Do you miss the steamed dumplings from the former Scrimshaw restaurant in Greenport?
Now you can learn to cook like Scrimshaw founder Chef Rosa Ross as she hosts cooking demonstrations and pop-up dinners at The Market in Greenport this season. The first dinner is set for Sunday, May 21 and there are limited seats left.
During this session Ross will make a Thai-inspired menu with rice paper summer rolls, peanut sauce, pad Thai, red Thai beef curry, fresh pineapple jicama salad and hibiscus tea. The class includes the demonstration and the full dinner. Guests are encouraged to BYOB.
“I’ll explain about the Thai flavor and profile and discuss all the recipes, of course,” she said. “It’s a little bit interactive. They can observe a little bit of the cooking and at the end they get a full meal.”
Ross, a Hong Kong native who opened her Asian-influenced restaurant in 2004, decided not to reopen Scrimshaw this year. Chef Frank DeCarlo of the NoLiTa restaurant Peasant will operate Barbabianca in its place this summer.

If you can’t make it to the event, Ross’ fans can still find her dumplings for sale at The Market and Lombardi’s Love Lane Market in Mattituck. You can also look forward to The Red Dumpling Truck, a joint food truck venture with fellow chef Greg Ling, this summer.
