Greenport Habor Brewing Co. is bringing a local legend’s iconic sandwich back to the North Fork for one day only. 

Chef Linh Trieu, owner of the former Wednesday’s Table, once a staple in Southold, will be serving her banh mi sandwiches on Nov. 11 from noon to 7 p.m., or until sold out, for a “Tuesday’s Table” pop-up at Greenport Harbor Brewing Co.’s Peconic location. 

Ann Vandenburgh, co-owner of the Peconic brewery, anticipates the event to be a big hit.

“When she agreed to do it, our Instagram post just blew up,” says Vandenburgh. “I think it was the most shares we’ve ever had.”

Trieu, who ran Wednesday’s Table from 2013 to 2022, knew that banh mi on the menu was non-negotiable. 

“People are going to revolt if I don’t do the banh mi,” says Trieu.

Her café-style spot served the highly acclaimed banh mi, gyros, braised short ribs, falafel, hot dogs, burgers and toasted peanut butter and jelly sandwiches — a mix of diverse dining and comfort food. 

“When I first opened Wednesday’s Table on the North Fork, there was very, very, very little with regards to diversity in flavors and food,” says Trieu. “So, I was like, ‘All right, I’m doing this, I’m bringing this out there.’”

Banh mi, a Vietnamese sandwich Trieu grew up eating, was new to a lot of her customers but a love-at-first-bite type meal. 

“I didn’t know if people were going to like it, I had no idea,” says Trieu. “I even started by not doing it super spicy, because I was like people aren’t going to want spicy, and then I had people just clamoring for it to be spicier.”

The sandwich is made with a light French bread filled with pork or chicken, fresh cilantro, fresh cucumber and pickled vegetables.

“It’s all about that perfect bite of the sour, the crunchy, the fatty,” says Trieu.

Since shutting the doors of Wednesday’s Table, Trieu started her travel business called Truescapes

“The funny thing is, some people who used to come to Wednesdays table, they’re still in my life but they now come to me for travel,” says Trieu. “It’s actually really touching when they come to me because it tells me that what mattered to them wasn’t just the food, it was the care I put into it, the thoughtfulness and trying to find that connection to people.”

Lately, she’s been yearning to get back into the food industry. She’s scratching that itch by working as a private chef and hosting pop-ups like Tuesday’s Table. 

In addition to the banh mi, there will be a few other throwback surprise selections from Trieu’s restaurant on the Nov. 11 menu. Plus, hot dogs and chicken fingers will be available for kiddos.
