Sometimes, mornings take the cake — especially ones that involve actually fluffy (or crispy) pancakes. Long Island is home to its fair share of diners and delis, meaning it’s not a tall task to find a tall — or short — stack of pancakes. We may be biased, but North Fork residents and visitors have it good when it comes to finding perfect pancakes. The number of diners, straightforward delis, quaint restaurants and upscale yet approachable brunch spots give diners a chance to have their pick of settings.

The menus also run the gamut, from classic pancakes to ones with berries and sweet surprises. From a beloved spot on Love Lane in Mattituck to a cheery ‘50s-style diner in Greenport, these North Fork restaurants are making pancakes the sizzle.

Main Road Biscuit Co., 1601 Main Road, Jamesport, 631-779-3463

Folks come for the signature biscuits and stay for the farmhouse-chic digs and creative comfort classics— pancakes included — at Main Road Biscuit Co. Food can be ordered to-go online, and the counter chalkboard menu details warm and cold beverages. Yet, we 20/10 recommend pulling up a chair at an unfussy, uncovered, light wooden table and ordering the buttermilk oat pancakes with maple buttered. The flapjacks come with a delicate grade-A maple syrup that will make even those least likely to be called “morning people” concede that life before noon is sweet.

This retro diner is a magnet for people looking for breakfast dishes to fuel their East End adventures until the dinner bell rings. The plain pancakes on the menu are a misnomer. Read the fine print — you can add everything from chocolate chip, cookie dough, cookies and cream…if it sounds more like an ice cream menu, ask yourself: Is that really a bad thing? There’s also a pancake quesadilla with scrambled eggs, bacon, sausage and cheese between two pancakes served with Vermont syrup. It’s like a breakfast potluck on a single plate — again, is that a bad thing?

Love Lane Kitchen, 240 Love Ln, Mattituck, 631-298-8989

Set on the idyllic and narrow Love Lane, the namesake upscale chic eatery serves breakfast every day from 8 a.m.–2 p.m. Snag a trio of griddle cakes — a filling but not over-the-top meal to start the day — made with buttermilk batter. A blackboard menu displays a rotating list of seasonal pancakes. They’re served with Vermont maple syrup all year long.

Housed in the Bay Breeze Inn, this restaurant boasts outdoor seating perfect for warmer weather and a cozy fireplace that exudes literal coziness come fall and winter. Flapjacks are a year-round affair. A short stack of three pancakes can come with blueberries. Or, opt for dessert for brunch by asking for a chocolate chip.

Breakfast can be a sit-down affair, but there’s not always the time, or you may be on your way to the beach or your boat. Sterling Deli serves up fast-casual food with sit-down-meal flavors. A pancake platter can come with “only” three flapjacks or a side of traditional breakfast protein (bacon, sausage or ham). Each comes with coffee or tea, ideal for a busy-morning jolt.

Renowned for its sweet treats, the pancakes at Country Corner Café are an unheralded North Fork star. The ample menu has numerous options, from quintessential buttermilk to whole wheat and banana and blueberry pancakes. You can count on two light and fluffy pancakes regardless of your flavor choice. Are you craving more? The platter comes with bacon, ham and sausage with one egg any style, and you can add blueberries, chocolate chips and an extra egg.

Cutchogue Diner, 27850 Main Road, Cutchogue, 631-734-7016

Crocs, Ugg slippers, t-shirts, jeans…anything goes at this landmark come-as-you-are North Fork diner — except reservations. The casual setting extends to the menu, a greatest hit of expected home-cooking classics like home fries and buttered toast that doesn’t feel the need to put any creative twists. Like Bruce Springsteen’s “Born to Run,” some classics are best left as they are. Pancakes come in a short stack or trio and can include bananas, apples, chocolate chips or blueberries if you fancy.
