When you live on a farm that produces 20 dozen eggs a day, thinking of new uses for the scores of yolks accumulated in a week is expected.
That’s why Browder’s Birds in Mattituck recently ventured into the mayonnaise business and is now offering a blend made with the yolks of its hen eggs, said farmer Holly Browder, one half of the husband and wife team that runs the organic poultry farm.
Made with yolks, canola oil, lemon juice, dijon mustard, sea salt and water, the ingredients are essentially the same as any store bought variety.
“It’s a little richer and ours is a little more lemony,” said Browder, adding that she’d like to make a shelf stable recipe.
Nofo mayo means it’s now possible to eat a chicken salad sandwich using only East End ingredients. Just grab some bread milled with locally grown wheat from the Amagansett-based Carissa’s Breads, Browder’s chicken and mayo and a tomato and lettuce from any local farmstand.
The mayo retails for $7 and is available at the Soundview Ave. farmstand and at the Riverhead Farmers Market, the North Fork Table & Inn Artisan Market and the Westhampton Beach Farmers’ Market.
