Center Cuts in Mattituck has been open for nearly a year and Chef Brian Von Der Linn is thrilled to be part of the North Fork community.

The chef recently reflected on the community response since a soft opening last Mother’s Day.

“It showed the demand for a butcher shop in this area,” Von Der Linn said.

The traditional butcher shop, unique to the North Fork, has a wealth of options, including both raw and grill-ready marinated items, from an absolutely mouth-watering burger to stuffed pork chops with a sweet twist. 

As Center Cuts prepares for the warmer months and spring and summer seasons, Von Der Linn is looking to partner with local breweries for marinades and sauces.

Brisket short rib burger

These rich, fat burgers mix brisket with short ribs.

Pearl hot dogs

The hot dogs hail from Boston. “Once we brought them over here they were hot,” said Von Der Linn.

Stuffed pork chops

These pork chops with apple cinnamon stuffing can go right into the oven.

Stuffed pork roast

The stuffed pork roast is stuffed with spinach, roasted red peppers, provolone and salami. “It’s a great, oven-ready thing,” he said.


“We carry prime and choice,” said Von Der Linn.

Bonus pick

Von Der Linn said that that the potato chips, made on-premises, are always a hot seller.
