The Town of Southold began allowing oyster farmers to sell their bivalves roadside in 2019, and a few months later, when all the raw bars and most restaurants closed due to Covid-19, there were more hand-lettered signs for oysters than eggs on our rural roads.

Oyster-lovers tucked into a bumper crop of fantastic oysters, and opening them became as essential to the skillset of local life as corn-shucking.

Here’s a rundown of the roadside stand oysters you can visit for a DIY on-the-halfshell treat, and if you’re still trying to get the hang of it, many of these stands also offer them shucked.
