Patrick Caserta, a Connecticut native, developed his winemaking skills in New Zealand, France and California before arriving on the North Fork as the winemaker at Shinn Estate Vineyards. Here’s what he suggests pouring with your Thanksgiving meal. 

ROSE HILL ROSÉ

A crisp, Provence-style rosé with good natural acidity and soft berry flavors is great to sip along with appetizers before the main course starts. “Sparkling rosé is an extra festive choice.”

MOJO CABERNET FRANC

Caserta’s favorite wine for the holiday meal is a cabernet franc. This signature grape of the North Fork works due to its “nice earthy notes that pair great across the menu.”

SHINN’S RED BLEND

A red that is more fruit-forward in style can help balance the diversity of the meal. “Avoiding wines with extensive oak aging is good practice as they can clash with many Thanksgiving foods,” says Caserta.
