Sure you’ve heard of dining that is farm-to-table, sea-to-table, farm-to-glass or any combination that translates to food and beverage taken directly from the source.
But here is a new one: farm to food truck.
8 Hands Farm in Cutchogue recently unveiled its new food truck, which will serve breakfast and lunch and will remain parked on the Cox Lane property. The operation will be overseen by husband and wife chef team Jonathan and Carly Copeland who recently moved to the North Fork from Washington D.C.
What is unique about the food truck is that the meat and eggs will all be sourced from 8 Hands’ pasture-raised chickens, pigs and lamb. The farm’s produce will also provide for the menu as the season allows.
Meanwhile, the truck is utilizing local organic potatoes grown at another farm for its chips.
8 Hands offers prepared meals and meats inside its farm store, but this is the first time it will be serving hot meals. The offerings can be taken to go or enjoyed at the handful of picnic tables set up on an outdoor patio.
“Not everyone is going to want to buy meats to take home and cook, so we’re trying to meet another demand,” co-owner Carol Festa said of the truck.
All the meat offered at 8 Hands’ adjacent store is made on premises with animals grown on the farm, which include heritage breeds like Tamworth pigs and Icelandic lambs and pasture-raised chickens. And although the farm is not certified organic, Festa and husband Tom Geppel feed their animals organic grain and adhere to sustainable practices.
While the menu will rotate, customers can expect 8 Hands’ breakfast sandwiches ($7), hot coffee and other breakfast items on weekend mornings. Other recent lunch selections included a barbecue chicken sandwich served on a brioche bun with housemade cole slaw ($12.50) as well as braised pork tacos topped with lime crema, radish and onion ($12.50).
Breakfast will begin at 9 a.m. on Saturdays and Sundays and lunch will be served at 11 a.m. on Mondays, Thursdays and Fridays.
Festa said you should be on the lookout for vegetarian options as well.
