As a major winter storm is preparing to bear down on the East End, here’s something that came across our desk that cheered us up a bit.
The Winter Painkiller is a hot cocktail now being served up at Red Maple, the cozy new American restaurant and bar at The Chequit on Shelter Island.
The inspiration for The Winter Painkiller comes from David Bowd, CEO of Salt Hotels (owners of The Chequit) and one of his favorite concoctions, the Painkiller.
Originally from the British Virgin Islands, Red Maple’s cold-weather version of the Painkiller puts a fun winter spin on an already delicious beverage. The homemade rum butter is loaded with fantastic warming spices that scream fall and winter, yet these are flavors that are also ever present in the tropical island cocktail scene.
Sailor Jerry rum gives the drink bite and backbone that a good winter cocktail needs, warming you from head to toe. The homemade coconut whipped cream drives home the Painkiller vibe while the fresh citrus oils of the garnish help every flavor “pop.”
The Winter Painkiller:
2 ounces Sailor Jerry Rum
2 heaping bar spoons of Rum Butter (recipe below)
Coconut Whipped Cream
Fresh Orange Peel
Put rum butter into glass.
Pour rum over butter
Top with hot water and stir until butter, rum and water are mixed thoroughly.
Top with whipped cream and lightly dust with coconut flakes and ground nutmeg
Squeeze oils from fresh orange peel over top hang from side of glass
1 cup (2 sticks) unsalted butter
2 cups Demerara sugar (a variety of raw cane sugar that is minimally refined)
1/2 cup honey
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 pinches of salt
1/2 cup Sailor Jerry Rum
Mix thoroughly with an electric mixer until smooth and blended. Refrigerate after making.
