Christopher Pappademas has succeeded Kasia Dabrowska, who left the Jamesport restaurant in December after less than a year, as the restaurant’s executive chef.

Pappademas, who graduated from Johnson and Wales University, was most recently at The Farm Table Restaurant in Bernardston, Mass. He described his style as “food with transparency” and said he abides by a farm-to-table philosophy.

“I want guests to have a feeling of familiarity with the flavors and ingredients,” he said. “I then want them to be blown away by technique and concept.”

A sample dinner menu features familiar entrées like braised beef short ribs (served with potato purée, celeriac, carrots, parsnip, crispy cippolini onion and beef demi) and roasted chicken (served with barley, cipollini onions, Swiss chard and chicken demi glace.)

Jedediah Hawkins is situated in one of the North Fork’s standout settings. Located in a refurbished 19th-century sea captain’s home, the manse features Italianate architecture, manicured grounds and a striking fountain. Other highlights include a glass-enclosed dining patio and speakeasy bar in the cellar.

Pappademas relocated to the East End from his hometown of Greenfield, Mass. last summer saying he was drawn to the area’s “natural beauty, the ocean and the established network of wonderful artisans and makers of fine food, wine, cheese.” He is the restaurant’s 12th executive chef since it opened in 2006.
