Industry Standard, a craft beer and small bites dining destination with a mission of catering to locals and restaurant staffers, quietly opened its doors in Greenport last week.
The new eatery, located on Front Street in the building that most recently housed Tony’s Asian Fusion, is owned by Bryan Villanti of nearby Vino and Vittles and operated by veteran North Fork restaurant staffers. Chef Greg Ling, the first executive chef at The Riverhead Project and formerly of The Frisky Oyster and now-shuttered Main, will helm the kitchen.
“The menu is going to change every week,” Ling said in a phone interview while sourcing items for the restaurant in Philadelphia. “I just cook what I want to eat at any given time. This week is going to be Philadelphia [inspired] items and Vietnamese-inspired items.”
He said to look for varied dishes like Peconic Bay scallop wontons or South Philly-style roast pork sandwich this weekend.
Last week’s menu, which was still posted on the door Monday, included small plates of fried red shisito peppers with salt ($7) and salt and pepper shrimp with chiles, garlic and scallions ($15). Large plates and extra large plates are also available. Prices for menu items ranged from $5 to $23.
The Industry Standard Burger, with lettuce, cheese, onion and sauce, will be a constant ($7).
Villanti, who plans to keep the eatery open year round, is hoping local servers, bus people, bartenders and hostesses will see it as a spot for a late-night meal or afterwork brew.
“It will be a social meeting place if you want to get a burger late at night,” said Villanti. “They [restaurant staffers] can come by for a drink or something to eat.”
Other locals involved include Dan Reyburn, who will serve as general manager, Mike Power, will will oversee the bar and Charmaine Strange who will also work behind the bar, Villanti said.
The restaurant’s kitchen will be open from 4 p.m. to midnight Wednesdays and Thursdays, 4 p.m. until 1 a.m. on Friday, noon to 1 a.m. on Saturday and Sunday from noon to 10 p.m.
