All it takes for a leg of chicken to be cooked to perfection is to lightly season the bird with salt and pepper and stick it in a rotisserie cooker for two hours.

Or at least that was the impression I got after ordering the dark meat quarter meal chicken at The Rotisserie and Smokehouse of Southold for a recent lunch.

I cannot recall a time in all my chicken eating years that I have tasted more delicious skin. Yes, eating the skin adds calories and saturated fat to your meal — but it’s also one of life’s greatest pleasures! Skinless chicken is probably one of the blandest and most boring protein sources in the world and the covering adds much needed texture and flavor.

If you order this dish, do yourself a favor and savor the skin. It’s just one of those little things in life.

Now the chicken itself was moist and fell right off the bone. There is only so much you can say about chicken, but this piece was flawless. It gets an A+ from me.

In addition to a leg of dark meat, the dark meat quarter meal ($7.50) is also served with two sides and a small piece of cornbread.

I chose macaroni and cheese and cole slaw to accompany my meal (I wasn’t going for low calorie l here). The result was a monotone plate, though the portions were generous and tasty. Other options include mashed potatoes, creamed spinach, baked beans and yams.

Rotisserie, which was started by venerable North Fork chef John Ross and sold many years ago, In addition to rotisserie and smoked items, it also offers a full menu of Mexican cuisine including tacos, tortas and quesadillas.

Visit them in Southold Square located at Route 48 in Southold. Open seven days from 11 a.m. until 8 p.m.

Now I know we have selected quite a few options that taste great but are exactly friendly to the old arteries, so we promise to chose some more health conscious offerings in the coming weeks.
