These two female longhorn cattle were recently spotted grazing on grass at North Quarter Farm on the corner of Roanoke and Reeves Avenue in Riverhead.

Farm owner Dee Muma acquired five bulls, two females and two calves at the end of 2013 from a farm in Pennsylvania. She follows what she calls the “farmer’s pledge” using the same standards as organic farming to raise them without using artificial hormones and feeding them a grass diet.
Longhorn cattle descended from animals imported by Spanish explorers. They evolved into a hearty cow which can take a lot of adversity.
Muma said that they have a similar nutritional profile as bison with less fat than regular beef, lower cholesterol and higher omega-3 fatty acids.
She plans on offering some cuts of the beef in her restaurant, Dark Horse in Riverhead, in January 2015.
