Deep purple fairy tale, Asian and Italian eggplants are now in-season at Mar-Gene Farms in Mattituck.

While the Italian variety is perfect for eggplant parmigiana, a chef might have to find other uses for the skinny Asian eggplant and the teeny fairy tale variety.

“You can barbecue the fairy tale eggplant whole,” farmer Gene Krupski said. “Just slice them and cover them in olive oil and garlic.”

Mar-Gene Farms does not have a farm stand, but their produce is available at the North Fork Table & Inn’s farmers market on Fridays and at the Riverhead and Greenport farmers markets on Saturdays.

Fairy tale eggplant is $3.50 per pound, the Asian variety is $2.50 per pound and the Italian eggplant is $3.50 per pound.

The vegetable will be in season through late August, Krupski said.
