Popeye’s favorite veggie is in season and available fresh at farm stands along the North Fork.
“Spinach is in season in the spring and summer until it gets very hot [out],” says Katie Reeve, farm stand manager at Bay View Farm Market in Aquebogue. “It doesn’t do well in the hot weather. Then we have it again in the fall.”
Ms. Reeve suggests pairing the leafy green vegetable with fresh fish. Have it instead of romaine lettuce for a fresh twist on a salad or use it to make spinach dip, a perennial crowd-pleaser.
