Noah’s in Greenport is known for its innovative farm-to-table menu. Locally sourced small plates such as Crescent Farm duck BBQ and seasonal entrees like corn risotto keep diners coming back time and again to experience chef Noah Schwartz’ latest creations.

Starting next month, guests will have more reason to stop into the Front Street hot spot. The restaurant is rolling out a new guest chef series designed to give diners the farm fresh fare they expect with a twist.

“The idea is to bring in different flavors to the restaurant than we normally serve on the menu,” Schwartz said. “I consider my food more new American and it is interesting for us to bring in a chef who works with Hawaiian flavor profiles or Asians flavor profiles because it spurs creativity that otherwise might not be on our menu.”

Chef Noam Kostucki, owner of HiR of Costa Rica, is the first guest chef of the year. He is known for his original iterations on classics from ceviche to quiche and will be using East End ingredients infused with seasonings and spices native to Costa Rica to prepare the dinner. The two chefs will scour local markets and docks to source the seven-course, three-hour dining experience.

This is the first time Schwartz has offered a collaborative guest chef dinner at the restaurant. The idea had piqued his interest for a while and came to fruition when Kostucki reached out about coming to the New York area for a pop-up dinner.

“We have a common acquaintance that worked in the Costa Rica area in the winters and the Greenport area in the summers who put us in touch,” Schwartz said. “Costa Rica, like us, has a lot of interesting seafood to work with so I am hoping to introduce new preparations from [Kostucki] who is also surrounded by water and apply it to seafood available here.”

Additional guest chefs have not yet been announced, but Schwartz said both national and international chefs would be invited to collaborate for upcoming dinners.

The first guest chef series with Kostucki is Friday, Nov. 2 and Saturday, Nov. 3 at Noah’s in Greenport. The seven-plate meal is $125 and a curated wine pairing will be available by the glass. Reservations are required and can be made by calling 631-477-6720.
