It’s time to add another item to your North Fork foodie bucket list.

North Fork Doughnut Co. is coming to Mattituck next month to satisfy your sugar needs. Expect tasty offerings such as traditional, handmade glazed and loaded apple cider doughnuts to pair with your morning coffee.

The Main Road store is opening in the former Yogurt Expressions around the corner from Love Lane, where Jimmy Lyons and Kelly Briguccia of Yaphank  took over the space and the neighboring beverage store in March.

The two-store Mattituck complex was the perfect fit for the couple to turn hobbies into careers. Lyons — who has a background in the hospitality and craft beer industries, working at Lagunitas Brewing Company — has been home brewing for 12 years, while Briguccia is a lifelong baker who has been making doughnuts for a decade, using family recipes. The Long Island natives said they fell in love with doughnut shops in the past decade while living in Brooklyn.

“There are a lot of great places in Brooklyn doing doughnuts and we really got into the idea of making them, so we started making them at home,” Lyons said. “Over the years, we started to collaborate with chefs and came up with a lot of interesting recipes. Now it’s time to do our own thing.”

When it came time to find brick-and-mortar storefronts for their first commercial enterprises the couple clearly envisioned a “homey” North Fork location.

“I have been coming out to Southold and the North Fork for a long time,” Lyons said. “My family has had a house [in Southold] for a while and we just have fallen in love with the neighborhood. We want to grow it into a family business.”

The couple is currently renovating the former frozen yogurt joint into a family-friendly café with a rustic American vibe. They’ve teamed up with In the Attic Too of Laurel and Jamesport to build a bar top from reclaimed barn wood, and plan on adding a cozy seating area for guests to relax. They’re also connecting with local farms to source fruits for fillings and homemade jams.

North Fork Doughnut Co. is slated to open on Friday, May 25 with a variety of doughnuts, including classic, vegan, gluten-free and creative, fun flavors. You can try them out before they officially open when they debut their offerings at First Fridays, which returns to Love Lane May 4.

As for the beverage store, it won’t close as the ownership transitions, Lyons said. Over the next several months, he hopes to stock more craft beer options and improve the growler-filling selection.

North Fork Doughnut Co. will be located at 13175 Main Road in Mattituck.
