After nearly a year of planning, construction and delays, Fiesta Mexicana restaurant in Wading River will open tomorrow, Thursday, Dec. 1.

The business is owned and operated by the Ramirez family, who owns a series of Fiesta Mexicanas across the country, including California, Texas and North Carolina. This is their first restaurant on Long Island.

“We have a lot of uncles, cousins, brothers and sisters involved in the business,” said Christina Ramirez, one of the managers at the Wading River eatery. “We work together as a team. That’s why we call it a corporation — because it involves a lot of people.”

Originally scheduled to open this past spring, Ramirez attributed Fiesta Mexicana’s delay to a combination of waiting for permits and family resources being spread too thin.

“They were splitting their time between the new Wading River restaurant and a new one in North Carolina,” she said. “By the time that had opened, we had to stay down there.”

Now living in Medford, the Ramirez family — who hails from Mexico City, Cuernavaca and Puebla — will serve cuisine distinctive to those regions, as well as standard fare like tacos and fajitas. Fiesta Mexicana offers a variety of meats, seafood, and salads, plus some vegetarian and Tex-Mex options.

The restaurant and bar can seat up to 80 people, while a separate party room can accommodate an additional 20 guests. Outdoor seating is planned for the spring.

Despite the close proximity of other Mexican restaurants in the area, including Señor Taco and Mesquite Tex-Mex, Ramirez didn’t seem concerned by the competition.

“I think there’s enough room for different styles of restaurants,” she said. “It’s not all the same thing.”

To ensure freshness, Ramirez said the restaurant plans to source as much produce as possible from North Fork farms.

“We will be serving natural and authentic food, with 90 percent of the ingredients made from scratch,” she said. “We’re going to make it like our grandmother made it, as original and natural as possible. Mexican food is like that. It has to be fresh.”

Fiesta Mexicana restaurant will serve breakfast, lunch and dinner Thursdays through Saturdays from 6 a.m. to 11 p.m. Breakfast, lunch and dinner will be served Sundays, but the eatery will close at 9 p.m. Lunch and dinner only will be served Mondays, Tuesdays and Wednesdays from 11 a.m. to 11 p.m. On opening day, the restaurant will host a mariachi band and feature happy hour drink specials from 4 to 7 p.m.
