The new owner of Skipper’s in Greenport is planning to add a take-out food shack serving lobster rolls and hot dogs, as well as an ice cream stand.

Owner Bryan Villanti said the food shack will be located at the back of the restaurant and built out of a reclaimed toll booth.

“I’m going to call it the ‘Lobster Booth,’ ” he said.

An ice cream stand is also planned for the front of the eatery and will serve scoops of ice cream and soft serve.

Villanti, who opened the small-bites restaurant Industry Standard in Greenport last fall, hopes to complete both projects this summer.

Industry Standard’s Chef Greg Ling is finalizing Skipper’s new menu with the restaurant’s new chef, Larry Evans.

Prices now range from a $5 cup of chowder to their $29 seafood entree, The Tackle Box, which includes scallops, shrimp, crab cake and fish of the day. Some Industry Standard dishes will also be added, including chimichanga ($13).

“We’re going to keep it seafood, but we will be simplifying the menu,” Ling said.

Villanti bought Skipper’s last year from Bobby Heaney, who owned the restaurant for nearly 40 years before retiring.

“The biggest challenge is trying to get in new blood and also keep the old blood,” Villanti said. “They mostly had all local and didn’t get any new people in, like ferry traffic. That’s what we want to try to get also.”

Skipper’s is open for lunch and dinner daily from 11:30 a.m. to 9 p.m. The restaurant is located at 4545 Route 25 in Greenport. For more information call (631) 477-2242.
