Dining out on the North Fork is usually a special experience, though it’s less frequently exotic.

But now Cuvée Restaurant at the Greenporter Hotel wants to whisk you away to India for an evening of culinary discoveries from the east.

On Thursday, July 23 Cuvée will host a one-night only pop-up dinner with Mumbai-based chef Rahul Akerkar.

The dinner will be chef Akerkar’s special menu using locally sourced ingrediants. Wine pairings for the evening will come from local vineyards. The dinner menu will include several vegetarian options and a mocktail pairing for diners who don’t drink.

The event is the brainchild of Cuvée chef Deborah Pittorino, who’s a big fan of Indian cuisine.

“I’ve done a lot of traveling to India and have a lot of friends there and have spent a lot of time learning about food there,” she said. “The kind of food that he does is true fusion, it’s a very elevated type of cooking.”

While the evening’s menu is a closely guarded secret, some of the local wineries already on the list include Bedell Cellars and Paumanok. Latham Farms in Orient will also provide ingredients.

Chef Akerkar is well known in the restaurant world for his work at the Mumbai-based restaurant Indigo. The son of an Indian father and a German-American mother, Akerkar developed a love for cooking as a pre-med student in the U.S.  For the last 25 years he worked in several top New York City restaurants, including Union Square Café, before returning to Mumbai.

Pitterino says that while Akerkar is bringing some Indian spices with him, many already grow in the U.S and here on the North Fork. “He’s procuring a lot of spices in New York, like American tumeric. Even if they’re American grown, they’re Indian spices. The coriander seeds are from my own garden. We grow cilantro on our property, dry the seeds and store the seeds over the winter.”

Pitterino hopes diners will find the evening to be a really unique experience and is considering doing more international pop-up dinners in the future with chefs from all over the world.

The event will have two seatings:

5:30 p.m.: Tickets will be $95.00, inclusive of drink pairings and gratuity

7:30 p.m.: Tickets will be $125.00, inclusive of drink pairings and gratuity.
