There is common misconception that riesling grapes produce strictly sweet wines. However, that is not always the case. Take for example Baiting Hollow Farm Vineyard 2013 Riesling, our ‘Wine of the Week.’

“A lot of people think of Riesling as being a sweet wine, but is really not,” said winemaker Tom Drozd. “It can be done in various styles. Because of [Baiting Hollow Farm Vineyard ‘s 2013 Riesling’s] bright acidity and strong citrus qualities, it balances out very well with any residual sugar.”

Baiting Hollow Farm Vineyard 2013 Riesling is off-dry and exhibits aromas of fresh pear, apple, white peach and jasmine. On the tongue, the wine has tropical characteristics that come through with citrus qualities, Drozd said.

Harvested in 2013, an ideal year for Riesling growth on the North Fork, the wine was cool fermented, aged in stainless steel and features a natural bright acidity that is rounded out with just the right amount of sweetness.

A popular choice in the tasting room, this wine can be paired with virtually any food from a shellfish dish to chocolate, Drozd said.

“It has become a perennial wine in our tasting room,” he said. ““It covers a broad spectrum of flavors and aromas and I believe is one of the most versatile wines that is available on the market. It is a nice change from say a Chardonnay or any other of the white varieties out there.”
