There are run-of-the-mill egg sandwiches served with just American cheese and ketchup and there are those done fancy, with truffle butter and brioche buns.

On the North Fork, the land of fresh locally sourced eggs and produce, there is no shortages of places to find a delectable egg sandy made either gourmet or traditional.

We searched far and wide to tell you where to get the best grab-and-go egg sandwiches east of County Road 105.

We favored specialty sandwiches over the traditional working person’s bacon, egg and cheese, but first we must note some honorable mentions. For the every day egg sandwich, Duffy’s Deli in Jamesport, Meeting House Deli in Aquebogue and Wendy’s Sound Avenue Deli in Mattituck will all more than get the job done.

So without further ado, here are the best North Fork egg sandwiches ranked and in order.

5. Wednesday’s Table

The chorizo and egg sandwich from Wednesday’s Table offers plenty of kick with just enough avocado to soften the heat. Served on a traditional Thomas’ English muffin, the sandwich contains spicy chorizo, fried egg, roasted red onion, avocado, pickled jalapeños and cheddar jack cheese.

“You need to like it spicy,” said chef and co-owner Linh Trieu. “There’s a lot of stuff going on to wake you up in the morning.”

Trieu said she sampled many different chorizo sausages before deciding on one with the right flavor … and not just spice. The pickled pepper is what makes this unusual, Mexican-inspired sandwich stand out for us.

“It might not be the biggest sandwich, but with all the flavors, it’s very satisfying,” Trieu said,

4. Wayside Market

Sometimes more really is more. And no one knows that better than the chefs at Wayside Market in Southold.

Ok, we know what you’re thinking: This is a traditional deli sandwich. But weighing in at more than 1.5 lbs there is nothing ordinary about this Hungry Man.

The base of the Hungry Man sandwich is a 12-inch hero that is stuffed full with layers of ham, eggs, bacon, sausage, hash browns, American cheese, salt, pepper and ketchup.

“Whatever they have in the back they put on the sandwich,” said manager Billy Iljina. “It could feed four people.”

At $10 it is also one of the best deals in town, considering you could make a few meals out of this colossal sandwich.

If the Hungry Man is too much to stomach, Wayside’s chefs will custom make any style sandwich you want.

3. Fork and Anchor

A BLT is good enough by itself, but add a fried egg and basil mayonnaise and the sandwich rises to another level.

“I think a fried egg is good on anything,” said Fork and Anchor co-owner Erin Johnson. “I could put an egg on any dish and it makes it better.”

The East Marion eatery’s signature sandwich is substantial enough for a mid-day meal or sustenance for those who might have partied a little hard the night before.

“It could be considered a brunch item,” Johnson said. “You could have it for a late breakfast.”

The sandwich is made with tomatoes from Sep’s Farm in East Marion when available, Johnson said. The Fork and Anchor is the only sandwich on our list made without cheese, but we don’t miss it with the addition of mayonnaise.

2. Erik’s Breakfast and Lunch

You won’t see this egg sandwich on the menu board at Erik’s Breakfast and Lunch, but the Awesome Egg Sandwich is a must try at the Southold eatery.

Made with souffled eggs and topped with cheddar cheese and Black Forest ham, the time it takes to properly cook the eggs makes it difficult for the staff to advertise this item. But now that you know about it, we must say the cheesy eggs continuously scrambled on a low heat are just divine.

“I keep whipping it until it’s fully cooked,” said owner Erik Brown.

Another selling point is the sandwich is served on a fresh brioche roll.

“The quality of the bread is half the battle,” Brown said.

We’ve never left Erik’s less than satisfied and are hard-pressed to find someone who has.

1. North Fork Food Truck

Where else but on the North Fork can you get an egg sandwich prepared by a James Beard award winner?

But that’s not the only thing that makes an egg sandwich from the North Fork Food Truck, operated by Claudia Fleming, a co-owner of the North Fork Table & Inn, and Cynthia Halloran, a sous chef at the restaurant, so superb.

Excellence starts with the ingredients.

“It’s the eggs,” said Halloran from inside the truck on Sunday afternoon. “We get them the day before, if not the morning of.”

The pasteurized hen eggs were laid by chickens at 8 Hands Farm in Cutchogue, where the truck was frequently found serving up breakfast this summer.

The sandwich can come with cheese, bacon, sausage or truffle butter and are served on a toasted bun from Blue Duck Bakery.

“The sausage we make in-house,” she added. “The bacon? people just love it.”

Add an order of home fries and a piping hot cup of coffee and you will be in egg sandwich heaven.

The eatery on wheels is an extension the North Fork Table & Inn and builds on the success of The Lunch Truck, a stationary food truck located behind the Main Road restaurant.

The truck will be parked outside the North Fork Table & Inn on weekends this winter. But be sure to check their Facebook page first.
