Schaudels opening The Petulant Wino in Aquebogue

“Approachable, funky and cool” is how Courtney Schaudel describes The Petulant Wino, a new restaurant set to open this spring in Aquebogue. 

Ms. Schaudel will manage the eatery for owner Tom Schaudel, her star chef dad. Lenny Campanelli, longtime chef at CoolFish in Syosset, will serve as chef.

“It is going to be a place where you want to hang out,” said Ms. Schaudel, a former waitress at CoolFish.

The Petulant Wino will most likely open in April or May, once paperwork is finalized, she said.

A graduate of The Culinary Institute, Mr. Schaudel opened his first restaurant on Long Island 30 years ago. He currently owns A Mano in Mattituck, A Lure in Southold and Jewel in Huntington.

Offering a relaxed vibe with a focus on Long Island wines and beers, The Petulant Wino will replace Comtesse Thérèse Bistro on Main Road.

Comtesse Thérèse announced on its website last weekend that Mr. Schaudel will keep much of the bistro’s staff in place when he leases the space. The Petulant Wino will also feature Comtesse Thérèse wines, which are still being poured in the tasting room there on weekends during the transition.

The 28-seat Comtesse Thérèse Bistro opened in the 1835 house in 2010, but has been closed since January.

The father-daughter duo is still finalizing The Petulant Wino’s menu, but Ms. Schaudel said guests can expect everything from tapas to a raw bar of local shellfish.

“We are very locally minded,” she said. “Fifty percent of our wines will be from Long Island. We’re going to try to promote the wine drinking out here.”
